  • The words "allipebre de..." serve to highlight any kind of fish made using this method. If they are not followed or preceded by the name of a fish, but rather left as the single word "allipebre”, it is always understood that the fish in question is eel, the best known and most authentic Valencian delicacy. Genuinely Valencian dish whose origin is established in the Albufera coastal areas.


    Crush the garlic in the mortar. Add to a clay pot with oil. Lightly fry, add the paprika and immediately add enough water to cover the fish. Add the chopped potatoes, chilli and salt. Let cook. When the potatoes are almost cooked, add the eel and salt to taste. Let cook.
