Lamb is one of the most consumed meats in the province of Castellón, so there are thousands of ways and recipes to prepare it and, of course, every village and household has its own traditional recipe. We will prepare this delicious dish using the less attractive part of the lamb.
Add the chopped raw meat, the onion cut into large pieces, the sprigs of rosemary, a little oregano, a glass of white wine, the salt, a few spoonfuls of breadcrumbs, the peeled garlic cloves and a few spoonfuls of crushed tomato to a clay pot with a little oil. Cover with water and simmer for approximately an hour and a half. Do a taste test after the hour and a half and add the grated semi-cured or cured cheese and salt to taste.
